Seasonal Beers

4.7% abv. Colour: Amber

Tasting notes: An amber coloured hoppy beer with a spicy aroma, and a bone-dry finish. Always a real favourite!

Background: Barebones is brewed with Maris Otter and Amber malts, a blend of hops including First Gold, and uses Nottingham Ale yeast. It is named after the Barebones Parliament which formed in 1653 as a stable political platform before Cromwell became 'Lord Protector'. The 140 nominees were selected by Cromwell, one of whom was fortunate to bear the name 'Praise-God Barebone'.

Food matching: The dry, hoppy taste of this beer and stronger ABV makes it stand up to the flavour-punch of spicy foods, or cuts through the rich taste of roast lamb or gamey meat perfectly.

Bare Bones

3.9% abv. Colour: Golden

Tasting notes: A light golden beer made with local wildflower honey. The Bees Knees is refreshing and mellow, but not sweet.

Background: The beer is made from Maris Otter Pale malt, a mixture of Saaz and English hops, Nottingham Ale Yeast, and local wildflower honey. The Bees' Knees is now also the name of the pub at our brewery site in Laneham, near Retford, Notts.

Food matching: A match made in heaven with honey mustard glazed pork or chicken, or a light salad enjoyed in the sunshine! For those with a sweet tooth, match with crumbly oatmeal biscuits or shortbread.

 

The Bees Knees

4.5% abv. Colour: Golden

Tasting notes: A beautiful golden beer, with refreshing fruity flavours of oranges, tangerines, and a twist of lime. Fallen Angel is our Christmas seasonal beer and is given a festive warmth by adding cinnamon to the brew.

Background: Fallen Angel's delicious flavour is a result of the use of the finest Maris Otter Pale malt in its brewing process, combined with Cluster hops, and Nottingham Ale yeast.

Food matching: Match with a tagine laden with apricots and dates, or with light chicken dishes. It's fruitiness also make it a perfect match for desserts and sweet pastries – bring out it's festive flavours with a cinnamon bun!

Fallen Angel

4.4% abv. Colour: Pale

Tasting notes: A pale beer based on a 14th century recipe that includes rosemary. It has a delightful flavour with a dry finish.

Background: Ginger Pig is brewed using Maris Otter Pale malt, a mixture of English hops, and Nottingham Ale yeast. It also has the additional ingredient of fresh rosemary, which was widely used in Britain before the introduction of hops from Europe in the 1600's.

Food matching: Pair up with light fresh dishes to let it's flavour shine through. Try with a frutti di mare pizza or spaghetti carbonara.

Ginger Pig

5.3% abv. Colour: Amber

Tasting notes: A sublime amber-coloured beer, with a burst of fresh tangerine and grapefruit flavour and a tantalising pineapple aroma, balanced with floral notes, and a dry finish with lingering flavours of toasted malt.

Background: Pandemonium is crafted from an expert blend of some of finest hops from around the globe, with New Zealand’s Waimea and America’s newest darling Azacca producing the mouth-watering citrus flavours and pineapple aroma, and English First Gold giving floral notes and bitterness.

 

Pandemonium

4.2% abv. Colour: Caramel

Tasting notes: A tasty caramel-coloured fruity and malty brew, with flavours of malt and figs.

Background: Rudolph's Ruin is our Christmas seasonal special brew, with the festive addition of dates and figs to the brew, giving a deliciously warming fruity flavour.

Food matching: The perfect match for your Christmas pudding and mince pies!

Rudolph's Ruin

5.0% abv. Colour: Copper
Tasting notes: A copper-coloured smooth beer with a hint of cinnamon and juniper. The perfect winter warmer to see you through the colder months!

Background: Spice of Life is brewed with Maris Otter Pale and Dark Crystal malts, Northdown hops, Nottingham Ale yeast, and a winter warming mix of cinnamon and juniper.

Food matching: A lovely match for dried fruits like dates and apricots, or enjoy a pint with a hearty winter stew or soup full of gamey meats, wild mushrooms and root vegetables!

Spice of Life

5.0% abv. Colour: Copper
Tasting notes: A copper-coloured smooth beer with a hint of cinnamon and juniper. The perfect winter warmer to see you through the colder months!

Surrender

4.8% abv. Colour: Golden

Tasting notes: A beautiful golden South Pacific Pale, with hints of citrus and tropical fruit notes, and a rich, biscuity finish.

Background: Made with Vienna malt, and finest Equinox and Cascade hops to give tropical flavours of papaya and mango. Surrender is a part of our core range throughout the summer months.

Food matching: Surrender is bursting with light, tropical flavours, perfect to match with fresh and fruity foods like Morrocan tagines, salads, and fish, or a sorbet for dessert.

Sweetlips

5.0% abv. Colour: Pale Gold

Tasting notes: A delicate, almost floral aroma with an initial fruitiness leading to a long, dry, biscuity finish. It is brewed in the style of German wheat beers, and is available in the authentic cloudy version (suitable for vegans), or the more usual clear version.

Background: Willy's is unique in the Springhead range, brewed in the traditional continental style using wheat malt, Hersbrucker and Saaz hops. Selected by their expert taster as the best beer of the Wetherspoon's beer festival in March 2012.

Food Matching: Top tip for a wheatbeer – perfect with sushi! Also match with other light, fresh dishes and salads or veggies.
